CHICAGO, Aug. 27, 2012 /PRNewswire/ --?Consumers may not have the means to travel the world, but that hasn't dampened their desire to experience new ethnic cuisines. Unfortunately, chain restaurants aren't meeting current consumer demand for new foods and flavors. Only a quarter of consumers polled for a recent Technomic survey say they are satisfied with the availability of ethnic offerings at limited-service (23 percent) and full-service (28 percent) chains, which translates into opportunities for operators to differentiate their menus and gain market share with globally-inspired offerings.
"Authenticity is crucial to the ethnic food and beverage purchasing decision," says Executive Vice President Darren Tristano. "Sixty-five percent of consumers say food that tastes authentic is one of the most important factors in deciding which establishment to visit for ethnic foods and beverages. Operators have an opportunity to create innovative and globally inspired menu items reflected through preparation, taste and flavor.? Consumers also say that dishes prepared by someone from that region are given greater credibility as authentic."
To help operators and others aligned with the foodservice industry more effectively understand consumer behavior, definitions, preferences and attitudes towards ethnic flavors and cuisines, Technomic developed the Ethnic Food & Beverage Consumer Trend Report.
Interesting findings include:
Three out of four consumers (77 percent) purchase ethnic foods and flavors away from home at least once a month.? The percentage is strongly driven by Asian and Hispanic respondents, with 90 and 88 percent of these consumers, respectively, purchasing ethnic food or flavors away-from-home at least once a month.
Data indicates that cuisine does not need to be from another country to be considered ethnic; nearly nine out of 10 consumers consider regional U.S. cuisines such as Cajun (89 percent) and Creole (86 percent) cuisines to be ethnic.
33 percent of consumers strongly agree that there are many ethnic foods they would like to order at restaurants but are not able to find.
Southeast Asian flavors are moving into the mainstream with the development of familiar offerings with a flavorful Thai, Vietnamese or Indonesian twist on sauces, dressings and ingredients.

Charlie Rose speaks with historian Douglas Brinkley about astronaut Neil Armstrong's modesty when it came to his NASA achievements.
Armstrong, who took humanity's first steps on the moon in July 1969, died today (Aug. 25) at the age of 82. President Barack Obama said he and his wife Michelle were deeply saddened to hear of?the astronaut's passing.
"Neil was among the greatest of American heroes ? not just of his time, but of all time," Obama said in a statement.
Armstrong commanded NASA's?Apollo 11 mission, which blasted off on July 16, 1969. Armstrong dropped onto the lunar surface four days later, and he and his two crewmates returned safely to Earth July 24, achieving a goal laid out by President John F. Kennedy eight years earlier.
"When he and his fellow crew members lifted off aboard Apollo 11 in 1969, they carried with them the aspirations of an entire nation," Obama said. "They set out to show the world that the American spirit can see beyond what seems unimaginable ? that with enough drive and ingenuity, anything is possible. And when Neil stepped foot on the surface of?the moon?for the first time, he delivered a moment of human achievement that will never be forgotten."
Armstrong and Apollo 11 lunar module pilot Buzz Aldrin spent more than 21 hours on the moon while fellow crewmate Michael Collins orbited above in their command module Columbia. The mission was Armstrong's second ? and final ? spaceflight; he had first blasted off aboard NASA's Gemini 8 mission in 1966.
Shortly after his boot first clomped into the gray lunar dirt, Armstrong uttered one of the 20th century's most famous lines: "That's one small step for [a] man, one giant leap for mankind."
The astronaut will continue to inspire explorers of all kinds far into the future, Obama said.
"Today, Neil's spirit of discovery lives on in all the men and women who have devoted their lives to exploring the unknown ? including those who are ensuring that we reach higher and go further in space," he said. "That legacy will endure ? sparked by a man who taught us the enormous power of one small step."

OSLO (Reuters) - A Norwegian court found Anders Behring Breivik sane on Friday in the murder of 77 people in a gun and bomb massacre last year, sending him to jail for at least 21 years and dismissing the prosecution's request for an insane verdict.
Breivik, who has admitted detonating a fertilizer bomb outside government headquarters, killing eight, before gunning down 69 at the ruling party's summer youth camp, faces the possibility of indefinite extensions to his sentence.
Many survivors and victims' families wanted a sane verdict, saying the opposite would diminish his responsibility for the attacks.
Breivik said he targeted the ruling centre-left Labour Party for its support of Muslim immigration. He dismissed being called a child murderer, arguing that his victims, some as young as 14, were brainwashed activists whose support for multiculturalism threatened to adulterate pure Norwegian blood.
Breivik himself had argued for the sane verdict as he wanted the attack to be seen as a political statement.

In roundtables with teachers and visits to classrooms, President Barack Obama is continuing to attack the GOP ticket on education this week, from Mitt Romney?s record to the snip-happy budget of vice presidential pick Paul Ryan.
Obama for America released an advertisement that is playing in Ohio and Virginia on Thursday, asserting that Romney ?cannot relate? to public school issues, such as the need for smaller class sizes. The video also criticizes ?teaching to some test,? referring to an oft-repeated criticism of the No Child Left Behind law, which ties school funding to standardized test scores.
The Romney campaign quickly shot back with a statement calling the education ad one of several ?misleading and hypocritical attacks.? While Romney?s statement responded to the ad ? such as Obama?s references to Ryan?s cuts and class size ? Romney is, in fact, a big proponent of standardized testing. ?I like testing in our schools,? Romney said in a 2007 debate. ?I think it allows us to get better schools, better teachers.?
LG Electronics has found itself at the center of quite a few patent lawsuits in recent years (both as a plaintiff and defendant), and it's now kicked yet another one off. As Bloomberg reports, LG has today filed suit against Toshiba Samsung Storage Technology, alleging that the Toshiba / Samsung joint venture violated a number of patents related to DVD+RW and DVD-RAM technology. In the complaint, LG further alleges that TSST is knowingly infringing on the patents as they were previously licensed to Toshiba itself (and TSST as an affiliate company) as part of a deal that expired in 2010. LG is asking for a jury trial to sort things out, and demanding that TSSC pay "no less than a reasonable royalty" along with some unspecified damages. ScienceDaily (Aug. 20, 2012) ? Many marine species will be harmed or won't survive if the levels of carbon dioxide continue to increase.
Current protection policies and management practices are unlikely to be enough to save them. Unconventional, non-passive methods to conserve marine ecosystems need to be considered if various marine species are to survive.
This is the conclusion of a group of scientists led by University of California, Santa Cruz researcher and Lawrence Livermore National Laboratory visiting scientist Greg Rau, and includes Elizabeth McLeod of The Nature Conservancy in Hawaii and Ove Hoegh-Guldberg of the University of Queensland in Australia.
The increasing concentration of atmospheric CO2 is thermally and chemically impacting the ocean and its ecosystems, namely warming and acidifying the oceans. By the middle of this century, the globe will likely warm by at least 2 degrees Celsius and the oceans will experience a more than 60 percent increase in acidity relative to pre-industrial levels.
"Our concern is that the specific actions to counter such impacts as identified in current policy statements will prove inadequate or ineffective," say the authors. "A much broader evaluation of marine management and mitigation options must now be seriously considered."
When carbon dioxide is released into the atmosphere, a significant fraction is passively taken up by the ocean in a form that makes the ocean more acidic. This acidification has been shown to be harmful to many species of marine life, especially corals and shellfish.
Earlier research has shown that ocean acidification can cause exoskeletal components to decay, retard growth and reproduction, reduce activity and threaten the survival of marine life including coral reefs.
Current marine policy recommends three calls to action to address ocean warming and acidification: stabilize or reduce atmospheric CO2 levels; increase monitoring to better understand and predict the ocean's physical, chemical and biological responses to elevated CO2; and preserve ecosystem resilience and adaptability by reducing non-CO2 related environmental threats.
While Rau and colleagues agree with the current policies, they conclude that these alone are unlikely to be enough.
"We are concerned that conventional marine environmental management methods may prove to be insufficient or not fully achievable in the time frame necessary to ensure the preservation of current marine ecosystems and their services in the face of CO2-related threats," Rau said.
The team suggests that policy makers solicit and evaluate all potential marine management strategies, including unconventional ones to determine which if any might satisfy the 1992 Convention of Biological Diversity's call for cost-effective prevention of environmental degradation.
The paper appears in the Aug. 19 edition of the journal, Nature Climate Change.

So despite all the nonsense that has been talked (mainly by Barry,) I have finally put an end to a game. ?After almost a week and some change of completion inactivity I was able to put an end to quite a good game in Rayman: Origins. I clocked in ten hours and forty three minutes missing out out on an extra 10 points because of two measly minutes. ?Frankly I?m surprised, I tried to soldier on with this game but found the last few stages extremely difficult and frustrating but I didn?t falter. ?While these other fools take the easy path by playing games on super easy mode, games they have almost completed, I on the other hand am?playing?through these games from the very beginning. ?Rayman was a stellar platformer, and this is coming from a person who is not into 2D platformers much. ?It was fun and playing co-op with my younger brother made things more entertaining.
I also spent some time?playing?Bastion, I am right at the end of the game but am trying to milk as much out of the game I can. ?Just spending some time trying to net a number of achievements.
The other big title I bagged was Darksiders 2, which I?ve spent close to ten hours playing. ?I?ll save my impressions for my review, but I must say I really enjoy this game. ?It took what the first Darksiders did and took a step further. ?It?s very similar like the advancement from Arkham Asylum to Arkham City, a lot more?of?the same but that?s?not?a bad thing.

Red meat and prostate cancer
Previous studies have associated diets high in red meat with an increased risk of prostate cancer. Recent research shows that cooking meat at high temperatures forms powerful carcinogens that may increase prostate cancer risk even more.
A team of scientists from the University of Southern California and Cancer Prevention Institute of California found that red meats cooked at high temperatures, especially pan-fried red meats, may increase the risk of advanced prostate cancer by as much as 40 percent.
Pan-fried carcinogens
The study, available online in the journal Carcinogenesis, gathered data from about 2,000 men who completed a questionnaire about their red meat cooking and consumption habits.? A little over 1,000 of the participants had been diagnosed with advanced prostate cancer.
According to the findings, men in the study who ate more than 1.5 servings of pan-fried meat a week were 30 percent more likely to have advanced prostate cancer those who said they rarely ate it. Men eating more than 2.5 servings of red meat, whether it was pan-fried, grilled or broiled, had a 40 percent increased risk of developing the disease.
Hamburger the worst
On the plus side, men who ate more baked poultry had lower prostate cancer risk. But once the poultry was pan-fried, the risk increased. Of all the pan-fried red meats contributing to prostate cancer, hamburger had the strongest association. Researchers speculated that hamburger accumulates higher levels of carcinogens because ground beef gets hotter and cooks faster than steak.
HCAs and PAHs
The USC study did not determine a cause and effect relationship between pan-fried meat and prostate cancer. But it is known that carcinogens known as heterocyclic amines (HCAs) form when the sugars and amino acids in meat are cooked at high temperatures. Grilling meat possibly adds to the risk factor, because smoke that rises when fat drips on the flames leaves deposits of polycyclic aromatic hydrocarbons (PAHs), another potent carcinogen, on the meat.
Avoid prostate cancer
Prostate cancer affects one out of six men in the U.S. About one in 36 men die from the disease, making it second only to lung cancer as the leading cancer killer, according to the American Cancer Society.
The facts about red meat, HCAs and PAHs may be hard to swallow during the summer barbecue season. But avoiding pan-fried red meat and poultry is a fairly easy and inarguably sensible approach to lowering the risk of developing prostate cancer.

A Spanish Springs family remains haunted by the recent, grisly backyard discovery of their beloved three pet dogs? bodies ? viciously killed by a coyote.
?It was nothing short of a crime scene,? Tiffany Crook said of finding her dogs deceased Aug. 10 in the family?s backyard. ?The hardest part for me is I was home. I heard nothing.
?This coyote left our house with a full belly, and our hearts broken,? she said. ?Our dogs were a part of our family.?
Tiffany and her husband, Stephen Crook, said they want the community to learn from their tragedy and to take precautions against coyotes.
The couple thought the urban location of their home, their fenced backyard and the security of daylight were reliable safeguards against coyotes.
They were wrong.
?I know this won?t bring our dogs home but, if we can make someone keep a close eye on their pet or small children, our dogs? deaths weren?t in vain,? Tiffany Crook said.
The deaths of the Crooks? pugs, Henry and Emma, and Ellie, a Brussels Griffon, were among 13 dog deaths reported as coyote killings in Sparks during the last three weeks, said Jack Spencer Jr., supervisory wildlife biologist with the U.S. Department of Agriculture?s Wildlife Services.
More have been reported maimed in coyote attacks, he said, but reports in Reno were not known or had not been made.
?If you live in downtown Reno, you probably don?t have to be worried,? Spencer said of coyotes. ?But if you live on the fringe of wetland habitat areas, like the edge of a golf course or waterway, that?s where they?re going to be traveling.?
Wildlife experts caution that coyotes can jump over backyard fences and eat small dogs who are left unattended. There have also been reports in the Lake Tahoe area of coyotes snatching dogs who were leashed during walks with their owners, biologists said. And while coyotes are known for coming out at night, they have been striking during daylight hours.
Coyote awareness, and eliminating food sources for the hungry, opportunist predators ? such as not leaving dogs and cats alone in yards ? will help prevent attacks on family pets.

We apologize that we were unable to comment on this transaction until it completed and were limited to reporting on news related to OnLive?s businesses. Now that the transaction is complete, we are able to make this statement.?

Gold and silver prices have recovered after Thursday?s significant losses; however, gains have been marginal in early trading. Gold prices posted their biggest one-day drop in almost three months on Thursday. Silver prices, meanwhile, fell more than 4%.
Gold slipped on Thursday after investors were disappointed with lack of action from the Federal Reserve. The Fed on Wednesday announced that it is extending its Operation Twist program. However, investors were hoping for more aggressive monetary easing from the central bank.
Speaking to Reuters, Nic Brown, analyst at Natixis, said that since August, September, gold has been trading like any other commodity and the one thing that will support prices this year is the potential for further aggressive monetary stimulus in the U.S., whether it is QE or a new policy. Brown said that while the Fed had chosen not to pursue aggressive stimulus measures, poor economic data from Europe, China and U.S. on Thursday suggested continued pressure for some sort of action.
At last check, spot gold prices were trading 0.23% higher at $1,569 an ounce. Gold futures for delivery in August on the Comex division of the New York Mercantile Exchange are down 0.3% to $1,570.20 an ounce.
Investment bank Fairfax today said in a research note that the recent sell-off in gold could well prove to be excessive if risk aversion rises in the coming months.
Silver prices are also gaining in early trading today. At last check, spot silver was trading 0.04% higher at $26.85 an ounce.
The gold/silver ratio today rose to its highest level since October.
In pre-market trading in New York, the iShares Silver Trust (ETF) (NYSE: SLV) is down 0.31% to $26.04, the ProShares Ultra Silver (ETF) (NYSE: AGQ) is down 0.73% to $36.49, and the ProShares UltraShort Silver (ETF) (NYSE: ZSL) is up 0.63% to $71.57.

Florida lawmakers agreed to set aside an extra $2.3 million in federal money to make 1,750 members of the state National Guard available for the Republican National Convention in Tampa later this month.

The city of Tampa was scheduled to give a demonstration Thursday of their security preparations, giving members of the public a look at K-9 units, bike patrols and other members of ?crowd-management units? that will be deployed during the?convention.
Demonstrators who have dubbed themselves the Coalition to March on the RNC? announced?Wednesday they plan to have 5,000 people march without confrontation through downtown Tampa on August 27th.
Plenty of other protests also?will surround the?Tampa Bay Times site of the convention. Occupy RNC, an offshoot of the Occupy Wall Street movement, will be there. Planned Parenthood is hosting a rally at nearby Centennial Park during the convention, while Doctors of America plan to?protest?at another downtown park.?
